Walnut Maple Cookies

Here's a great all-natural recipe for WALNUT MAPLE COOKIES. They have no sugar and no eggs. They are very addicting.

WALNUT MAPLE COOKIES

2-1/2 cups walnuts (ground in blender)
2/3 cup whole wheat pastry flour
1 tsp salt
1/3 cup flax seed meal
1/3 cup  chocolate chips
1/2 cup + 2 TBSP maple syrup
2 tsp vanilla

Preheat oven to 350 degrees. In small bowl, mix all ingredients in given order. Spray large cookie sheet with oil. Drop dough on cookie sheet with spoon and flatten with a fork. Bake 10 to 15 minutes or until golden brown. DO NOT OVERCOOK. Let cool before removing from cookie sheet. Makes approx 1 dozen cookies. ENJOY!

Whitlock I think I would have to at least tripple the recipe as with one dozen they usually disappear someplace betwen the oven and cooling rack.  ;D

Hey Sis, I wonder if you could coarse grind the acorns and leach them then try them in the recipe?   Probably be like eating an oak tree though.

Glenn, I think I will try a batch made with the acorns. I tried some in a loaf of bread and it turned out great. It had a nice nutty flavor. I substituted some of the flour with the ground acorns. I will let you know. Will see if using chopped up acorns work.

Thanks Sis.  It will be interesting.  I need to see if I can still find some --- Did it several years ago and didn't use them then got rid of them.

We have several squirrels running around getting fat off pine cones/nuts. I think they eat our acorns too; something does anyhow.

Squirrel Stew

~ 3 squirrels, cleaned and cut up
~ 1/4 cup all purpose flour
~ 1 teaspoon salt
~ 1/2 teaspoon pepper
~ 2 slices bacon
~ 2 tablespoons butter
~ 5 cups of water
~ 1 - 28 oz can whole tomatoes
~ 1 chopped onion
~ 1 heaping tablespoon of brown sugar
~ 2 potatoes, peeled and cut into 1/2 inch cubes
~ 1 - 10 oz package frozen lima beans
~ 1 cup frozen corn
~ 3 tablespoons all purpose flour

Combine 1/4 cup flour, salt and pepper. Coat the squirrel pieces.

In a Dutch oven, combine bacon and butter over medium heat until butter melts. Add squirrel and brown.

Add water, tomatoes, onion and brown sugar and bring to boil. Reduce heat, cover and simmer for 1 1/2 to 2 hours, stirring occasionally.

Remove squirrel pieces and let cool. Remove meat from bones.

Add meat, potatoes, beans and corn to Dutch oven. Heat to boiling, reduce heat and cover. Simmer until potatoes are tender.

Mix 3 tablespoons of flour with 3 tablespoons of cold water, then stir into stew. Heat to boiling.

Cook over medium heat, stirring constantly, until thickened, bubbly.

Serve with warm rolls and enjoy!

We've also got rabbits all over the place. Last weekend there was snow on the ground here and there, on the road in, the hill up and around the property. There were deer and (I think) elk tracks, rabbits tracks and rabbit fur where it appeared a rabbit got ambushed by a hawk, I'd guess. And down the slope a ways there were scattered turkey feathers. Somethings been having an early Thanksgiving.  :D  And dog or coyote tracks. Probably coyote as we see poop with hair in it.

I like the snow if only because all the footprints that show up. You never see most of these animals otherwise.

There's a veritable feast out there.

My favorite cookies are chocolate chip. There... back on topic.  ;D
