I
ve had great success controlling my diabetes with diet alone. Thanks to all the advice I got here and a ton of reading, I've stayed normal for a good while now.

I take a reading an hour or so after every meal and am learning exactly what does what to me.

Our local Cracker Barrel has been wonderful about preparing meals the way I want them. One thing that has been a big surprise has been their breakfast skillet. I get the ham and cheese WITHOUT the potatoes and my blood sugar actually goes DOWN.

This morning I decided to make my own version of it. I used country ham I had sealed up from Christmas, green pepper but didn't have any red pepper, forgot the onion, 2 eggs, didn't have any bacon and used shredded cheddar cheese like they do.

I ate a little less than one of their servings.

After an hour, I took a reading. It wen UP 100 points. >:( ??? >:( >:( ???

I guess I did something wrong. It's going to take all day to burn that off >:(

The ham from Christmas past.

Was it a brown sugar coated ham r maybe one that had maple syrup all over it?

peternap

It may have been sugar cured ???

I'm back to 95 now, hopefully I'll go a couple points lower because it always goes up 6 or 7 during the night.

Try a steak in lieu of the ham next time and see if there is a difference in your glucose level.

Peter it is not that uncommon for it to escalate even 100 points after a meal.  In time your body will handle it back to your normal.  When you get into trouble is stacking on top of that without giving it a chance to stabilize.  Since you are getting aquainted with the rascal you know what you can and cannot do.  That is the secret.

Thanks John! It was just a shock to see it swing that much, that quickly. I'm at 82 now and it will go up a little tonight. I haven't figured that out yet but it will go down when I start moving around in the morning.

It's going to take some time to really get a handle on what does what and just how much to eat with exercise. Walking does a slow burn but heavy lifting makes it drop like a rock.

The only thing I really miss is gravy and biscuits :) I had to swear off all bread except pumpernickel. That doesn't seem to have any effect either way. I haven't figured how to make gravy either.

BTW....are you going to the Fishersville Gun Show tomorrow?  Jane and I are going and then going to the farm on Sunday.

Peter,

Try a mushroom gravey.   Use you favorite mushrooms (I mix shitaki with other types) and cook them down, then I use a little arrowroot to thicken.

Let me know if it works for you.

I need to go to the doctor and have my blood checked.  I have been eating a lot of sweets and that is not the usual with me.  I just want to make sure.  DW is worried about me.

Not that I can understand completely (I am not personally diabetic) but I can understand giving up things you like. My favorite candy in the world has always been the Peanut Butter Cup. Guess what?.....A few years ago discovered I am allergic to Peanuts and now need to keep an epi pin with me at all times. Had to give up Nutter Butters too. My favorite foods, Cheese, Chocolate & Peanut Butter. sigh

Peter I didn't know of the gun show.   Don't tell my son he has been looking for a Savage Mdl 110- 7MM-08.  Looked at some but tooooo high $600.  If you see any get the dealers name and I can contact later.  I have already made plans for Tomarrow.

Speaking of Fishersville.  Feb 7th is the builders Auction.

I will ask BIL & SIL about the rise at night.

Hey Peter, A friend of mine mentioned that he does not like to let his sugar get too low either as he doesn't want to chance passing out while driving and doesn't want to lose his license-- just mentioning that as I don't know what the safe range is --Sassy is off to work this weekend.

Peter:
My ex-wife was a diabetes educator and nurse in an endocrinology practice.  Being married to her I learned a lot about diabetes.

You mentioned in one of your earlier posts, that you take a blood sugar measurement "an hour or so" after eating.  That is called a "post prandial" measurement and if memory serves it is correctly taken as close to TWO HOURS after eating as possible.  The reason for this, again if memory serves is that normal blood sugar increases for two hours after eating and is at it's max pretty close to two hours after eating.

I don't mean to be picky, but if you see a 100 point increase at one hour after a big meal, who knows what that increase might be at two hours.  I know that might sound scary, but I'd hate for you to see a 100 point increase, and maybe or maybe not be too worried about it, when the actual increase was maybe 150 points or even 200 points (and you not even know it).

Now, if I have misinterpreted your "an hour or so" statement, and you do also take two hour measurements sometimes, then I apologize for possibly poking this hornet's nest.

Good luck with your diabetes management.

You didn't misinterpret it B74, I just didn't completely state it. I take my readings often. I always take it before a meal, then 1 hour after and then an hour after that. I also take it after hard exercise and sometimes, just to see where I am. I log everything including what I ate, what I did before and after and how I feel.

I agree with you about not letting it sneak up on you, 100%. According to the doctor I went to, I was in very serious condition when I first realized it. I've forgotten the number the first time I took it but it was over 400.

I'm trying to track what everything I do and eat does to me and to be honest, it's been amazing. Many things that I had attributed to my heart, have gone away, like not being able to walk over a few yards at a time and asthma, failing eyesight etc.

Speaking of the Doctor, the members here have been more help than he was. He wanted me on medication then and said I couldn't control it with diet. I haven't been back! >:(

Peter talked to BIL and he said that your sugar will go up and down in the night.  The problem he has it will hit rock bottom sometimes and he wakes in a cold sweat.  Jams the sugar pills to bring it up.  Said he couldn't understand the bread thing.  He said it might be a combination of something with the bread on some occassions but the type shouldn't have that much to do with it unless it is a sugar bread variety.

I told him about yours climbing after meals.  His does also and is not concerned as he knows after all these years what will raise his and in time it will go back down.  Just not to take an overdose of the things you should be careful of.  It really hasn't changed the things he eats he just knows how much and how often.

Thanks John!
I guess I still have a lot of experimenting to do.

BTW, you didn't miss anything at the gunshow. I'll keep an eye out for a 110. It's a popular gun and considered the best low cost basis for a sniper rifle, so they turn up often.
