In two weeks I will be starting my pressure treated wood foundation. Code calls for 6 mil plastic.  I have a source for ice and water shield, which I will be using on my roof.  I was thinking this may be a better product to use on my  foundation?  Any thoughts?

so you are thinking you can get ice and water cheaper than 6mil pastic or just that it may do a better job than plastic?

gonna be harder to work with.

I was thinking as it is thicker, it would be longer lasting and easier to backfill without trearing?

It has more seams. I wasn't thinking "either, or" but if you would like to use it "in addition to" it probably wouldn't hurt. Thicker poly would probably be the best thing to spend the money on though.

Something to be aware of is that Ice and Water shield isn't listed for direct exposure to sunlight. Not sure if that's an issue for you...

Grace's ice and water in not for the foundation you should be using Graces Bituthene® 3000 or a similar product.
