Leave Foundation Over Winter?

Question from a newbie builder:

Starting planning for the cabin build next year - probably 20x34.  Due to road conditions it will probably be early summer until we can get a cement truck in which will lead to a couple lost months of building time.  If I pour my footings and foundation (stem wall) in the fall well before the ground freezes could I leave it over the winter as is or is that not a good idea to leave it over the winter without the structure on top of it?

We have stable, well drained soils and get a ton of snow if that matters.

If there is no lateral problem... if frost is the only problem, you can fill it with straw to keep the footings below frost depth. that said I've worked on foundations we certainly weren't protecting through the winter and haven't had a problem. If water can't saturate and freeze there is little danger of frost heave.
