Panelized cost vs standard building

I'm getting a quote on panelizing my Victoria Cottage, including the floors,walls, and possibly trusses (though probably not unless they're designed so that we get some headroom).  Since my labor is cheap or free, can anyone give me any advice on relative costs, pros and cons, and what to look for?

Go to www.building-cost.net.  Input your numbers into the model.  It will ask your zip code, which it will then use to estimate material costs and labor in your area.  In my area (central Arkansas) I found I would save a BUNCH building it myself.
