Removing fake wood interior door frames... replace with what?

I'm considering buying a cottage that has interior door frames that are covered with that fake (plastic?) wood look, similar to the fake sh%$@! that you find on the end panels of wall cabinets.

I want real wood door frames because I am not going to paint them, but rather stain and finish them nicely.  Can interior door frames be found made out of nice wood to be finished?

Also, two of the doors are pocket doors.  The current doors are just flat panels.  Can pocket doors be replaced with nice, perhaps raised panel ones?

In the interest of time, it would be faster to sawzall out the door frame, and insert a pre-hung interior door.  You can easily swap out a door in less than an hour.  Otherwise, plan on a couple of hours to rebuild the frame and jams with 5/8" stock.  Getting the hinges marked and set can be a pain if you don't have a template for a router.  Hollow raised panel doors that are prehung can be had at big box stores for less than $50, but staining of the frames are usually out because they are finger joined.  Lowe's sells an interesting painting book that shows how to faux paint a surface to look like stained wood.

Another option would be to remove the existing jams, peel the existing plastic veneer and overlay good wood veneer and stain.  Trim with hardwood and stain to match.

Yes, you can put a raised panel door as a replacement for a pocket door.  Stick with hollow core doors for the pocket door.  Solid wood doors are heavy to operate and can warp, which can cause binding.

I am like Shooter I would replace the whole thing.  However I think because I like real wood I would choose that.  You will pay more than prehung composite Big Box doors but they come in any style you want.  You might have to go to a regular lumber yard.  Most of the larger ones at least around here have there own door shop and you just tell them what you want they will mortise the hinges and assemble them not at a huge cost.  Then just trim them out to your taste.
