Volks Cottage - Future Build?

I have been hanging around the forum for a while, finally getting to the planning stage with hoping to start building in 2016. I like the looks of the Volks Cottage (pretty much as drawn). Has anyone built this plan or have one under construction?

I have a couple of ideas regarding the foundation for the Volks Cottage, your input (good and bad) is welcome and appreciated. As Joe Friday would say, "Just the facts":

1) Building in or near Chama, NM on 2 to 5 acres (property has not been purchased yet).

2) This will be our full time home (and our place to retire in............20?? :))

3) Volks plan would be built with either crawlspace or basement foundation. I like the idea of a "daylight" or "walk-out" basement if there is enough slope to allow for this. Frost depth is around 4'.

4) House will be "on the grid". Water source as yet undetermined, I will have an option to haul water.

Now, 3 possible options for building sequence:

A) build the entire foundation and structure (to at least weather tight) all as one build.

B) build the entire foundation and the main (26'x28') structure then build the second bedroom (16'x16') later.

C) build the main (26'x28') foundation and structure then build the 16'x16' bedroom foundation and structure later.

Option A is preferable, what issues do I have with the foundation if it partially exposed (Option B) or added later (Option C)?

Again, I welcome your input.
