Very good and covers everything you needed to know but were afraid to ask.... except.....

Using a cast iron skillet as a weapon... quite effective used properly... [waiting]

Thanks for the info, Paul.  I like using cast iron pans but the eggs always stick so then I give up & start using the cephalon non-stick pans - I know they are probably not good for us but drives me nuts when half of what I cooks sticks to the pan  d*

Here's what I do with eggs cooked on cast iron-

Pour some oil (vegetable or whatever) in the pan, enough to cover the bottom and I also coat the sides. Put pan in oven @ about 250 or so degrees for about 1/2 hour. Wipe excess oil, and then use what you normally do. I use butter.

When I get the whole pan hot there is absolutely no sticking, and I can wipe the pan clean with just a dishrag in a few seconds afterwards.  :)

Well, dug, I have to admit that technique would work every time:  the way to never get eggs to stick is to never put eggs in the pan!

Hot off the press.  I uploaded this video about eight minutes ago.  It shows a cast iron skillet fished out of the garbage, covered in gunk.  The gunk is burned off and a new seasoning layer is put on.
