I was asked for the recipe in another thread- I thought I'd put it here for everyone's benefit. It goes great with BBQ! (Note- this is NOT a dessert!)
Ingredients:
5-6 Vidalia onions, sliced thin
4 eggs, lightly beaten
1 cup sour cream
1/2 cup unsalted butter
1/4 cup grated parmesan cheese
2 TBL hot sauce
Salt and pepper to taste
2 nine inch baked pie shells
1/2 cup grated parmesan for topping
pinch of paprika
Directions:
Preheat oven to 375
In a skillet cook the onions in the butter for 10 minutes or so, turning often, until soft and clear. Do not brown them. Reserve the juices.
In a large bowl, mix the onions with the eggs and sour cream. Stir in juices and cheese. Add hot sauce, and salt and pepper to taste. Make sure all ingredients are well blended, and pour into pie shells.
Sprinkle cheese on top, and sprinkle with paprika. Bake in pre-heated oven for 20 minutes, then lower temperature to 350 and bake an additional 30-40 minutes, until lightly browned on top. Let set for a few minutes before slicing.
That sounds good and I think I can eat everything but the pie shell!

I tried something similar once only it was made with green tomatoes and onions and it was sooooo good.
Thanks for posting, MushCreek - sounds really good! And HG, adding the green tomatoes would give a bit of a tang to it - sounds good, too!
I made something like this once - carmelized onions - they were great and tasted good too, but I nearly blew myself up later.... :(
I brought some in for the guys at work, and they all liked it. We all agreed some crumbled bacon would have been a good addition, but then, we like bacon on everything! A few drops of hot sauce is good on it, too!
