Title: Banana Bread

I survived the Holiday food pretty well but one thing I really miss this time of year is Banana Bread. I love it and simply can't even walk past it without causing my Glucose to obtain orbit.

My daughter did some digging for ideas and came up with this. Flax seed meal, banana flavored Protein Powder, butter (which doesn't bother me at all) and yeast.

It was delicious, maybe better than what Jane used to make.
The best part is it didn't move my sugar levels one notch either way. ;D

1 1/3 cup splenda
2 eggs
1 cup of butter (soft but not melted)
1 tsp banana extract
1/2 cup almond flour
1 1/2 cup granulated flax seed
1/2 tsp baking soda
1 1/4 cup chopped walnuts

bake at 400 F fr 10-15 minutes

Note:
I'm using 1/4 cup almond flour and 1/4 cup banana flavored protein powder instead f 1/2 cup of almond flour. I'm guessing you could do away with the almond flour altogether and just use the protein powder.
